Can it run while we are closed?

Yes for the right jobs, such as summaries, checks and prepared drafts. Anything that sends, spends, publishes or changes records needs a clear approved scope.

Is autopilot available from day one?

Not for serious outside-impact work. Day one is about proving the workflow, then moving safe repeat work into scheduled or bounded automation.

Will it send anything without me?

Day one, no. It drafts replies, quotes and chasers for you to approve. Later, a clear repeat job can become scheduled or scoped autopilot only after the limits, account and stop rules are agreed.

Do I need to be technical?

Not at all. You ask in plain English ("reply to this enquiry", "chase unpaid invoices") and we set up all the technical side for you.
